I was just hunting some squash recipes... wondered if y'all had any.

Oh, I love yellow crooknecks!
And the yellow patty pans (not the green or white ones) are the sweetest summer squash I know. Dice them into 1/2 or 3/4 inch cubes and stir-fry them in canola oil with diced onions and they sweeten up as if they were sugared. Toss some diced green peppers in too.

Yeah, those are like we've been doing ever since I can remember. A couple of the local restaurants here do squash casseroles... I found Paula Dean's recipe. Other than some spaghetti squash recipes, I'm not finding much different.

I'm rather fond of butternut squash baked until soft , removed from the rind , add butter and salt and pepper and I'm good until I need another fix .

Wife likes these things, makes them out of home-grown zucchini.

* Grate zucchini in cheese shredder
* Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes
(wife usually helps this process along by "pressing" it in cheesecloth or clean kitchen towel)
* In a large bowl, combine zucchini, flour, Parmesan, garlic and egg; season with salt and pepper, to taste
* Heat olive oil in a large skillet over medium high heat
* Serve immediately

sour cream or greek yogurt go well with these.
